Overview

Green Tea is made from the leaves and buds of the Camellia sinensis plant, the same plant that yields black and oolong teas. The difference lies in the processing—Green Tea leaves are not oxidized. They are quickly steamed or pan-fired after harvesting, which preserves their high concentration of polyphenols and catechins, particularly EGCG (epigallocatechin gallate), the powerful antioxidant for which it is most famous.
