Overview

Dill is an annual herb related to celery, native to the Mediterranean and Southern Russia but now widely cultivated in India. Both its feathery leaves (dill weed) and its seeds are used in cuisine and medicine. The seeds have a more potent and pungent flavor and have been used for centuries as a digestive aid and a breath freshener.

In Ayurveda, Dill seeds are known as Shatapushpa. They are a powerful carminative used to pacify Vata and Kapha doshas. Traditionally, they are given to new mothers to promote lactation and to soothe colic in infants (as gripe water). They are excellent for relieving gas, bloating, and indigestion.

For a Digestive Tea: Steep 1 tsp of the seeds or powder in a cup of hot water for 5-7 minutes. Strain and drink after meals to prevent bloating.
As a Culinary Spice: Use the powder in pickles, lentil dishes, and bread to impart a unique, warm flavor.
