Vanilla is derived from the fruit of an orchid, the Vanilla planifolia. The long, bean-like pods are hand-pollinated and undergo a long and careful curing process of drying and sweating over several months. This labor-intensive process develops its complex and beloved flavor profile, which comes from the compound vanillin and hundreds of other aromatic components.
