Overview

Tamarind is the fruit pod of a large tropical tree. Inside the brittle pod is a sticky, tart, and fruity pulp surrounding hard seeds. This pulp is dried and processed into blocks, concentrates, or powders. It is a foundational ingredient in South Indian dishes like Sambar and Rasam, as well as in chutneys and sauces across the country.

Tamarind is a classic souring agent in Indian cuisine. In Ayurveda, its sour taste stimulates digestion and pacifies Vata. The ripe fruit pulp is a well-known gentle laxative. It is also rich in antioxidants and is used to support heart health and purify the blood.

As a Souring Agent: Dissolve the powder in a little warm water to create a tamarind paste. Add this tangy liquid to curries, soups (like Rasam), and sauces to provide a characteristic sour flavor.
In Chutneys and Dips: Tamarind powder is a key ingredient in sweet and sour chutneys often served with snacks like samosas.
