OUR CERTIFICATIONS

Overview

Brassica alba produces small, light-colored seeds that are the basis for the classic bright yellow American-style mustard. They are less pungent than black or brown mustard because their active compound, sinalbin, is less volatile than that of their relatives. They are often used in pickling spice blends and in culinary applications where a milder mustard flavor is desired.

French: Moutarde blanche
German: Weißer Senf, Gelbsenf
Chinese: Bái jiè (白芥)
Arabic: ردل أ ضيخب (Khardal abyad)
Spanish: Mostaza blanca
Russian: Белая горчица (Belaya gorchitsa)
Japanese: ホワイトマスタード (Howaito masutādo)

Yellow Mustard is the mildest of the mustard seeds. Its gentle warming properties are used in traditional medicine to stimulate digestion and relieve muscle soreness. It is less intense than its brown or black counterparts, making it more suitable for pacifying Pitta in moderation, while still being good for Kapha and Vata.

In Pickling: Whole yellow mustard seeds are a key ingredient in the brine for pickling vegetables.
For Making Mustard: The ground powder is the primary ingredient for homemade mustard. Mix with water, vinegar, and other spices.
As a Mild Spice: Use the powder in sauces, dressings, and rubs where a gentle, tangy heat is desired.
