Curry leaves are a digestive and hair care treasure in Ayurveda. They are known to pacify Pitta and Kapha doshas. Traditionally, they are used to stimulate digestive enzymes, support liver function, and manage blood sugar. For hair, they are a celebrated tonic, used to prevent premature graying, strengthen the hair shaft, and stimulate new growth.

For Tempering (Tadka): Add a sprig of fresh leaves or a teaspoon of dried leaves to hot oil along with mustard seeds and other spices to create an authentic South Indian flavor base.
